Bright, clear but darker this year; the bouquet is more forward with black and red berry flavours more prominent. The fruit is obvious on the pallet enjoying as it does a harmonious relationship with the acid. A relationship the augurs well for medium term development.
Our Terrior
Pauline Russell and John Boucher believe good wine is made in the vineyard. The terrior of our site is unique in the Macedon ranges and as such allows us to produce quality grapes for our premium wines. Factors include the granite soil, long cool summers, vineyard aspect and close planting.
Vines
French “MV6” clones expertly hand pruned with follow up shoot thinning in spring to contain over cropping.
Wine Making
All grapes are handpicked, de stemmed ,open vat fermented and hand plunged to dryness at relatively low temperatures to steady the pace of fermentation. Basket pressed and aged in French oak (15% new) for 12 months prior to bottling.
Malolactic fermentation follows with the advent of increasing seasonal temperatures.
