Tasting Notes Once again we have been fortunate to secure our Shiraz fruit from a quality Heathcote source. Our winemaker John Boucher using classic cool climate practices has created a wine of great interest. This is a fresh, youthful and slightly tangy wine that is full of promise. Whilst the complete integration of fruit, acid and tannin is not yet complete it is remarkably easy wine to enjoy now. Powerful, deep purple colour with elements of liquorice, blackberry and tobacco to excite ones pallet. It is very moreish and as such will be a challenge to maintain a stock in the cellar for long enough for the wine to reach is considerable potential.
We suggest careful cellaring for 3-5 years.
Wine Making The grapes were hand picked and de-stemmed into open fermentation tanks. The ferment is then cold soaked for several days before yeast is added. Fermentation employing hand plunging of the skins to extract colour, the wine is then lightly pressed before being transferred into French oak barrels. Wine maker- John Boucher.
Our Terroir Pauline Russell and John Boucher believe that great wine is made in the vineyard. These grapes were sourced from a well established local vineyard in the Macedon Ranges, of which we believe the terroir of the site is perfect for the production of premium cool climate shiraz.
