Chardonnay Unwooded 2008

Tasting Notes
Initially lean displaying lemon, grapefruit, nectarine and fig flavours with a fresh mineral character and a long lingering finish. The French oak is restrained. A classy wine with loads of complexity and strong acid structure that will see this wine age gracefully for 5 to 7 plus years.

Wine Making
All grapes are hand picked and full bunch pressed then fermented to dryness at relatively low temperatures to achieve a slow balanced fermentation. After fermentation lees stirring was carried out for 6 months and the wine was allowed to go through partial natural malo lactic fermentation.

Terroir
Pauline Russell and John Boucher believe the best wine is made in the vineyard. The terroir of their site is unique from other sites in Macedon Ranges, allowing them to produce quality grapes for their premium wine. This is formed by an infinite number of factors, from the granite soil to the aspect of the vines. Each vine is expertly hand pruned followed by shoot thinning at the end of Spring. Using the same format each year allows the vines never to be over cropped. It is from this John & Pauline produce their premium wines.
