	Tasting Notes Our Cab Sav is usually quick to sell out as we only make a limited amount. This wine has a smooth and mellow blend that makes a great bed partner with eye fillet steak. Wine Making All grapes are hand picked and de-stemmed into open fermentation tanks. The ferment is then cold soaked for several days before yeast is added. Fermentation-employing hand plunging of the skins to extract colour, the wine is then lightly pressed before being transferred into French barrels. Winemaker - John Boucher.
